Raspberry in gel without added sugar
Raspberry in gel was prepared using the traditional method. The raspberries were thoroughly washed and then pitted. I fried the raspberries prepared in this way in a pot with a thick bottom. Frying causes the water to evaporate and the sugars to caramelize, i.e. the process of food darkening, which contributes to the formation of caramel as a result of the high temperature acting on the natural sugars of the fruit. This process is very important in the preserves I prepare, because it helps bring out the true flavour of raspberries. To obtain the consistency of a delicate gel, at the end of frying I added potato starch, and then erythritol and lemon juice to taste. I placed everything in jars and gently pasteurized them
